Yassa: Senegal’s National Chicken Dish By Nourishing Africa

Yassa is a popular Senegalese dish made with lemons, caramelised onions, and chicken (however this can be substituted with lamb or fish). This dish is popular not just in West Africa but around the world.

 

Normally ‘poulet bicyclette’ is used to make yassa. In Senegal, it is very common to see chickens freely running around in small villages. These chickens are nicknamed poulet bicyclette because of their speed and the shape of their legs which look like the legs of a cyclist. It is quite different from the standard chicken, the meat on poulet bicyclette is said to be juicier and tastier.
